Ingredients (8 cakes)
For the fillings
100g peeled split mung bean ( ½ cup)
¼ cup shredded young coconut (optional)
1 tbsp roasted sesame seeds
1 tbsp vegetable oil
3 tbsp sugar
11g vanilla sugar (or 1 tsp vanilla extract)
¼ tsp salt
For the dough
1 cup glutinous rice flour “Bot Nep” (or sweet rice flour mochiko) 100g
3 tbsp sugar
¼ tsp salt
3/4 cup milk
½ cup coconut flakes (eg.

I love the one with roast peanut filling.
A friends mother from vietnam makes these. They are soooo gooood. Like a gummy bear on outside but softer and distinct texture. Mildly sweet. I am thinking of surprising her and make my version for her. I would like to go non traditional on inside filling. Not the mung beans, not ice cream, but what about other things like ……???????. Anybody?

I love these elegant snowball cakes. The texture is wonderful. It has sticky glutinous rice cover and soft mung bean filling mixed with crunchy shredded coconut and crispy roasted sesame seeds. It's surprisingly flavorful and delicious.
